Basic Bruschetta Topping

Makes about 4 cups
2 lbs tomatoes
2 tbsp minced garlic
1 cup fresh basil
2 tsp balsamic vinegar
Kosher salt and ground black pepper
Extra virgin olive oil
Dice tomatoes and place in a bowl. Add a pinch of salt and garlic and lightly toss. Set aside for 30 minutes to marinate.
Chiffonade basil and add to tomatoes with vinegar.
Drizzle with olive oil until tomatoes are lightly coated. Adjust seasoning.
