Chopped Greek Salad

Serves: 8


1 large cucumber

1 medium red onion

½ cup Feta cheese, crumbled

1½ cups grape tomatoes

2 tsp dried oregano

¼ cup white balsamic vinegar

¼ cup extra virgin olive oil


Chop cucumber and onion into ¼” dice. Quarter tomatoes lengthwise (halve if they are small). Place all ingredients in a large salad bowl. Sprinkle oregano, vinegar and oil over the top. Check for seasoning. Add kosher salt and pepper as needed. Add additional vinegar and/or oil as needed. Serve.
