Sweet and Spicy Tomato Bruschetta with Ricotta

Serves: 4 - 8
3 cups cherry or grape tomatoes, halved lengthwise
4 cloves garlic, smashed and peeled
2 sprigs fresh basil, torn
1 tbsp olive oil
½ cup honey
1 tsp Sriracha
Pinch of kosher salt
1 cup ricotta, at room temperature
4 to 8 thick slices ciabatta, toasted or grilled
6 fresh basil leaves, julienned
Kosher salt and ground black pepper
Heat olive oil in a medium saute pan over medium heat. Add tomatoes and garlic. Cook until tomatoes are softened and garlic is browned (do not burn garlic). Then add basil, stir to combine and remove from heat.
In a small bowl, combine honey with Sriracha and salt. Stir well and set aside.
In a separate bowl, whip ricotta with a spoon until creamy and spreadable.
Spread each ciabatta slice with ricotta. Top with tomatoes and drizzle with honey.
