Asian Cucumber Salad

Makes 4+ cups
2 medium cucumbers, thinly sliced
2 – 3 tbsp kosher salt
¼ cup sugar
½ cup rice wine vinegar
6 – 7 green onions, thinly sliced
½ to 1 tsp red pepper flakes
1 tsp grated fresh ginger
1 tsp toasted sesame oil
Freshly ground black pepper
Place cucumbers in a shallow bowl or 6-cup storage container with a lid. Sprinkle with salt and set aside at room temperature for 30 minutes.
Run water over the cucumbers to rinse and drain. Pour sugar over the top followed by the vinegar. Shake or toss with a spoon. Add remaining ingredients and toss/shake.
