Caprese Pasta - Fresh Tomato, Mozzarella and Basil

Makes enough for 1 lb of pasta
1 lb of your favorite pasta (long or short) cooked according to package directions
3 medium ripe tomatoes or 1 cup grape tomatoes
¼ cup extra-virgin olive oil
1 large garlic clove, minced
20 basil leaves, julienned
8 oz fresh mozzarella, cut into very small dice
Balsamic reduction (optional)
Kosher salt and ground black pepper
Cut the grape tomatoes into quarters or chop the tomatoes into small dice and place them in a large bowl. Stir in the oil, garlic, and salt and pepper to taste. Add the basil leaves and toss gently.
Drain the pasta and add it to the bowl. Gently toss to coat the pasta. Add the mozzarella and toss again.
Finish with a drizzle of balsamic reduction, if desired.
